When the man with the kulfi sticks comes by the neighborhood to sell his kulfi sticks, it was nothing short of selling happiness and the price was cheap, for many a deal well squandered, to now reside in memory. Such was the extent of love for this delicious frozen dessert in the hearts of people. The traditional dessert is extremely popular in India, Pakistan, Myanmar, Bangladesh as well as the Middle East, and is a favorite in Indian Menus around the world.

Kulfi Recipe

Believed to have origins in northern India, which was then under the rule of the Mughal empire in the 16th century. Kulfi recipes traditionally were a mixture of condensed milk to which pistachios and saffron were added, packed in cone of metal they would be then frozen using a mixture of ice and salt for preservation, which would be transported from the Himalayas to the warmer regions of the empire, the cup covering the dessert was called ‘kulfi’ a persian word which meant covered cup giving it the name of the dessert we know love and enjoy.

Traditionally kulfi recipes are prepared via slow cooking milk that is sweetened and flavoured, continuously stirring to prevent sticking, once the sugar and lactose carameralized, the flavored milk would then thickened, its volume reduced by half, providing the kulfi the flavor we all know. After pouring into moulds, using salt and ice the kulfi is froze in a well insulated vessel to protect it from outside heat, slowly freezing it prevents ice crystals from forming, providing the kulfi a smooth texture. Kulfi, due to its dense texture melts much slower in comparison to the western ice cream.

Most of us get our kulfis from street vendors known as kulfiwala who stores the frozen molds,  submerged in their carts in a salt and ice mixture. Kulfi is sold worldwide in restaurants and is highly appreciated for its unique taste, it comes in several flavors and variants and in different prices.

Different types of kulfi:
  • Malai kulfi is kulfi in a thick layer of ‘malai’ which is cream. A great dessert for the summer, delicious and rich in cream which is further enhanced with the addition of dry fruits and almonds.
  • Pista kulfi is a simple kulfi garnished by pistachios which makes it healthier and well loved by many
  • Mango and strawberry kulfis like the name suggest are kulfi mixed out of mango and strawberries along with some amount of milk.

Kulfi recipe are easy to learn but mastering them takes practice to get the taste we desire yet many continue to do so for their love of the sweet dish.
