Kulfi Recipe Believed to have origins in northern India, which was then under the rule of the Mughal empire in the 16th century. After pouring into moulds, using salt and ice the kulfi is froze in a well insulated vessel to protect it from outside heat, slowly freezing it prevents ice crystals from forming, providing the kulfi a smooth texture. Kulfi, due to its dense texture melts much slower in comparison to the western ice cream. Most of us get our kulfis from street vendors known as kulfiwala who stores the frozen molds, submerged in their carts in a salt and ice mixture. Kulfi is sold worldwide in restaurants and is highly appreciated for its unique taste, it comes in several flavors and variants and in different prices. Different types of kulfi:
