Tandoor was previously used for making bread. About 100 years ago in Gora Bazaar, Peshwar, presently in Pakistan, there was a shop of Mokha Singh called Mukhey da Dhabha where a young chef called Kundan Lal Gujral worked. I have experimented and created tandoori chicken by putting yogurt marinated chicken pieces in the tandoor. After the partition, Gujral came to India and opened a restaurant called Moti Mahal in Daryaganj, Delhi. Here accidentally he created the dish to prevent leftover food from getting spoilt. As there was no refrigeration in those days, he put the leftover tandoori chicken pieces in the tomato gravy and added butter and cream to soften the chicken. This is how the butter chicken recipe was born. Soon the popularity of this tasty dish grew and many famous personalities visited the restaurant of Gujral. Many leaders of the country and world leaders like John F. Kennedy and personalities like Shah of Iran have visited Moti Mahal restaurant to try the dish making the dish gain worldwide recognition. The popularity of the butter chicken is because of simple ingredients and massive taste. Restaurants all over the world have used the recipe of butter chicken and created their own version.
